SPECIAL RECIPE SECTION
CARROT CAKE

Ingredients:
1 lb. grated carrots
4 eggs
2 cups applesauce
1 cup dark brown sugar
2 cups whole wheat flour
½ cup Mega Omega® or Simply Omega-3™
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
(Optional: ½ teaspoon ginger, ½ teaspoon allspice)
1 tablespoon pure vanilla
½ cup raisins
½ cup dried cranberries
1 lg. banana (Mash it chunky—gives you nice banana bites in the cake)
1 cup blueberries
Method:
Beat together eggs, applesauce, carrots and brown sugar. Add the rest of the ingredients and mix well. Pour into a greased & floured 13x9 cake pan. Bake at 350 for 62 minutes on upper rack. When cooled, store in refrigerator. (Note: Most ovens vary in temperature. This is a “heavy” cake and you want to avoid burning the edges. Check the cake after 60 minutes. Baking time can vary from 60-65 minutes, but at 62, mine comes out perfect!)

Sure Steps to Fighting Inflammation
When most people consider training for a marathon, they look for a proven training schedule. Schedules can be found on the internet and most of them are very similar. They advise starting out slowly and gradually building your mileage until you are conditioned to run 26.2 miles.
Something not found in most marathon training schedules is good advice concerning muscle recovery. My advice is, first, to learn your nutritional needs – not just about calories, but also about food choices.
Omega-3s and Omega-6s Not the Same
If you are reading this newsletter, chances are you know something about omega-3s and omega-6s. But you may not know how they affect muscle recovery.
Because of the different structure of each of these two Essential Fatty Acids (EFAs) the proportion of omega-3 to omega-6 in the foods we consume is very important to the body’s ability to stave off inflammation.
Unfortunately, the Western diet has changed dramatically in the past 50 years. That change began with the information that polyunsaturated fatty acids (PUFAs) were heart healthy. So, seed oils containing omega-6s were introduced to the food chain at an alarming rate.
Food processors began using more and more seed oils because they went rancid less quickly than omega-3s. This meant longer shelf life for packaged foods and higher profits for the manufacturer.
Five decades later, four of these omega-6 containing seed oils make up 96 percent of the vegetables eaten in the United States. Soybean, corn, cottonseed and canola oils are prevalent in most items you find packaged in the grocery store.
An Omega Balance
Because of the structural differences in each of these EFAs, knowing how to keep them in balance is very important to health. Omega-6s are more rigid and therefore inflammatory, while omega-3s are more pliable and act as an anti-inflammatory. Keeping the two types in balance in your body, with a ratio of 1:1, is the ideal. However, because of the changes made through processing, the average American consumes 20 times more omega-6s in their diet and increases their risk to the many medical problems associated with inflammation.
For those running a marathon, as well as for the average person, it is therefore important to boost the diet with rich sources of omega-3s and decrease consumption of omega-6s to reduce the affects of inflammation.
Another sure way to reduce inflammation has always been to use ice or cold water. Following a long run or race I look for a cold river or lake to submerse in, as seen in the accompanying photo. The young man that ran with me the final 25 miles of a 50-mile race thought the soak in the cold White River was more difficult than running the race, but the next day he thanked me for it.
Anti-oxidants and Omega-3s
However, when you are not able to sit in a fast moving river or lake, having a diet rich in omega-3s will go a long way in keeping inflammation to a minimum.
Using a supplemental source such as Omega Fields’ Mega Omega® or Simply Omega-3™ is an excellent way to help with that concern. Race Report
April has been a busy month for racing as I prepare for the 24-hour World Championships the first weekend in May, in Bergamo, Italy. I sandwiched in the Illinois Marathon and Expo in Champaign-Urbana on April 10 & 11. This first-time marathon (26.2 mi.) and its surrounding events drew over 10,000 participants and we had lots of people stop at our Omega Fields Health booth to discuss reasons they should be using our Mega Omega® and our other nutritional products. I managed to place first in my age group the next day, as I had in the Mad City 50-K (kilometer, 31.1 mi.) the weekend before in Madison, WI.
A week after those two races I hopped on the start line in Hopkinton, MA, the city that has hosted the official start of the Boston Marathon for nearly one hundred years and is the sister city to Marathon, Greece. In the international field I fared well with a tenth place age-group finish, the best I have ever placed there.
I was at the Boston Marathon expo a couple of days earlier and was asked by a representative of the Mayor of Marathon to be their guest at next year’s 2500th anniversary celebration of the event from which the word “marathon” is derived. 2500 years ago a Greek warrior ran from the plains of Marathon to Athens to announce the defeat of the Persians at the hands of the Athenians.
